Recipes from Peru – Papas Rellenas (Stuffed Potatoes)
Here I am back to expand our cookbook: Peruvian gastronomy
Today I want to offer you a typical recipe from Peru, LAS PAPAS RELLENAS! It literally means stuffed potatoes and although there are many versions of it, the concept is understood! It is in fact a potato wrapper with a filling inside, that varies from country to country and from family to family, always maintaining the basics of the original traditional recipe.
It goes without saying that this Peruvian dish can be found in almost all typical restaurants, from the most modest where you can find the traditional recipe to more refined restaurants that elaborate the recipe and re-propose it in a more chic version.

INGREDIENTS
(6 people)
For the dough
• 1 kg boiled potatoes
• 2 raw eggs
For the stuffing
• 3 boiled eggs
• 6 pitted black olives
• 250 g of beef
• 1 teaspoon of crushed red chilli pepper
• 1 teaspoon of minced garlic
• 1 chopped onion
• Cumin and pepper to taste
• Flour, oil and salt.
• Level: ѼѼѼ medium
PREPARATION
1. Prepare the dough: Boil the potatoes, peel and mash them hot until a homogeneous mass is obtained. Add the raw eggs and mix well.
2. Prepare the filling: In a deep frying pan, sauté the diced onion, garlic and chilli pepper. Add the diced beef and brown it, season with salt, cumin and pepper to taste. Finally add the hard-boiled eggs cut into small pieces and the olives cut into slices.
3. Divide the dough into individual portions.
4. Put the filling inside the dough and cover with the same dough, giving each portion an oval shape.
5. Sprinkle with flour and deep fry each portion in abundant oil until a nice golden color is obtained.

Being a very versatile recipe it can be modified according to taste by adding or removing some aromas, or by removing the meat to be able to make a vegetarian version, in short, as always in the kitchen, the possibilities are endless and everyone can give his personal touch.
